• 1 C Cold Butter

• ½ - ¾ C Ice Water

Beef Hand Pie Filling

• 1 lb. Chuck Beef

• 2 Onions

• 2-3 Potatoes

• 1 Turnip

• 2-3 Carrots

• 1 t Thyme and Rosemary

• 2 cloves Garlic

• 2 T Olive Oil

• 1T Worstershire

• 2 T Flour

• 1 C Beef Stock

• Salt and Pepper to taste

Chicken Hand Pie Filling

• 1 lb. Chicken thighs diced 1 inch

• 1 Onion diced ½ inch

• 1 Carrot diced 1 inch

• 1 Potato or Turnip diced 1 inch

• 2 Cloves Garlic crushed

• ½ t Thyme and Sage

• ½ C peas

• 2 T Olive Oil

• 2 T Flour

• Salt and Pepper to taste

• ½ t Worstershire Sauce

• 1 C chicken stock

Mushroom & Lentil Hand Pie Filling

• 1 lb. Mushrooms cleaned and chopped

• 2 Leeks cleaned and finely chopped

• 2 cloves of garlic crushed

• ¼ Head of Cabbage finely chopped

• 2 T Olive Oil

• 1/3 C Cooked Lentils

• ½ t Rosemary and Parsley

• 1 T Soy Sauce

• Salt and Pepper to taste

• 1 T Flour

• ½ C Vegetable broth

• 12 C Flour

• 1 ½ t Salt

• 2 t Cinnamon

• 6 C Butter softened

• 3 C Sugar
